Risotto bites
Heres something new I tried with some left over risotto. There wasn’t enough to have a proper meal, so I decided to make these mini bites instead. The risotto was shaped into little balls and I pan fried them for a few minutes flattering them until cooked. I then added the pork, pancetta and some herbs to finish it off and served these as starters. I was pleasantly surprised with the outcome and probably will try making these again.

Risotto with asparagus and pork
Risotto dish I made when I had friends round for dinner. Not made risotto for a long time, so was a bit wary of how it would turn out. Turned out very good though, everyone said they enjoyed it and I enjoyed it too. If it didn’t take so long to make, I would probably have risotto most days. Awesome food!
